As an executive chef and founder of Vital Creations I have a single guiding philosophy: To help people enjoy the benefits of pure food in an open, friendly, and enjoyable way.

Below are several topics of conversation and facts that have been uncovered during my journey in the world of culinary arts.

Highlighting Locally-sourced ingredients & traditions

With vegan cuisine generally, and living foods specifically, I experienced how locally sourced plant-based foods - the staple diet of many cultures - provided me a level of vitality, energy, and serenity rarely seen in the traditional West. (Indeed, I am glad to share that my childhood asthma disappeared when I incorporated a whole food dietary program into my personal life!) Going above and beyond the whole foods regimen along with the guidance and institution of my studies I began eating food only in its raw state, experimenting with their living textures, smells, and tastes. With each creation, I saw the horizon of Living Foods broaden.

My work as Executive Chef for Healthy Adventure is for those who want to experience a different and more natural path; a path certain to give you a new and vibrant meaning of health and wellness. Our goal is to illuminate new avenues to nutrition by highlighting locally-sourced vegan ingredients & traditions. We seek to offer more healthful alternatives to the customary vacation fare. Whether through inspired haute cuisine or the simplest of comfort foods, our creations seek to satisfy not only the palette, but the mind, the soul, and the community as well.

Together, we have joined a growing network of inspired entrepreneurs and socially-minded companies who are committed to truly sustainable business practices. This fellowship links us to the expanding collection of advocates, enthusiasts, and professionals throughout the world working together to advance awareness about sustainable agriculture, businesses, and lifestyle enhancements.

Why Raw?

As executive chef for Healthy Adventure Signature Vacations, I aim for a rich menu that emphasizes Living (or Raw) Foods but that also includes cooked vegan vegetarian cuisine. As a guest, you will experience world-class cuisine during all of your meals; a treat for the vegetarian and non-vegetarian alike.

Living and raw foods are those plant-based foods that are still abundant with living, active enzymes and nutrients. When we heat foods to temperatures above 118 degrees Fahrenheit, we break down and destroy living enzymes, stopping all enzymatic activity within the food. And though cooked cuisine can support certain nutritional needs, nothing quite compares to the vibrant colors, potent tastes, and divine textures that living foods provide.
